The scientists of Applied Biotechnology Department of Trade and Economic Faculty created a fundamentally new food product - meat snacks.
On December 27, 2012 the production technology of a unique product was patented in the State Register of Inventions of the Russian Federation. The patent holder is South Ural State University.
The invention of such meat product is not just a realization of challenging ideas of the scientists from Applied Biotechnolofy Department. A lot of scientific investigations had been carried out before that product appeared. In particular, in the course of investigation of the food ration among Chelyabinsk citizens it has been pointed out that in the ration there is a lack of animal albumen, the majority of vitamins, macro- and micro-elements thus it can be explained by low level of meat products consumption.
It is commonly known that meat and meat products belong to the most well-known food products which have a significant role in the people's nutrition. And it is meat product that contains a considerable amount of all the necessary amino acids. That is why the food ration of our citizens should consist of a large quantity of meat products. Though earlier the peculiarities of raw products and resource limitation did not allow to get the final product, which is ready for consumption, with the highest characteristics. The invention of Applied Biotechnology Department allows to increase significantly the nutrition value of meat products and improve the characteristics of its storage.
In the course of investigations the scientists proved the expediency of starter culture usage while the production of meat snacks and determined the preparartion of starter cultures which fully satisfies the technological requirements. The developed technology is optimized for the usage of raw meat products in accordance with the requirements of Hazard Analysis and Critical Control Points system.
On the ground of complex analysis of the received results the technology of meat snacks production has been developed.
It should be additionally noted that the production of new meat products called "Meat Snacks" meets the requirements of sub-item 14, item 3, article 2 of Federal Law No.31-FZ (for the Ministry of Defense of the Russian Federation and the Ministry of Civil Defense Affairs, Emergencies and Liquidation of Consequences of Natural Disasters). It means that in the nearest future the meat snacks as well as the well-known canned food will appear on the special menu of military and specialists of the Ministry of Emergency Situations.
